Salad with poemegranate and gruyere

Salad with lots of greens, stamnagkathi, poemegranate, gruyere peelings and honey vinaigrette

Ingredients
  • Stamnagathi   "Spiny Chicori" or 'Coastal Chicory' 
  • Rocket leaves
  • Romaine lettuce hearts
  • Lollo lettuce (green and red) 
  • Iceberg lettuce 
  • whatever green you find fresh 
  • 2/3 fresh green onions
  • 4/5 strands of dill
  • 1 small cup of walnuts
  • seeeds from one whole pomegranate
  • 100 gr Graviera  "Cretan Gruyeres "

Ingredients for the Vinaigrette Dressing

  • 2/4 spoons of Extra Virgin Olive Oil*
  • 1/4 spoon Vinegar*
  • 1/4 spoon Lemon
  • spoonful of Honey*
  • 1 spoonful of Mustard
  • salt and pepper
Method
  1. Cut all greens by hand in a bowl
  2. pace leaves of the Stamnaghathi
  3. crack the walnuts slightly
  4. add the pomegranate seeds
  5. add the onions
  6. add half of the Graviera
  7. add the finel chopped dill
  8. Prepare the Vinaigrette separately and beat well to emulsify
  9. Spread over all ingredients
  10. Serve on a platter and finish the plate by adding the remaining Graviera peelings, place 2/3 walnut halves on top and sprinlke with some more pomegranate seeds
